Tomato and feta pastries recipe.

4 sheets of frozen puff pastry
A handful of spinach or baby chards leaves
200g sun dried tomatoes
200g feta cheese
sprigs of fresh oregano and basil

Thaw the pastry sheets and cut into quarters.
Dice the tomatoes and chards. Crumble the feta into a bowl and mix in with the tomatoes and greens. Finely chop the herbs and stir them through.
Place a spoonful of the tomato mix in the centre of each small piece of pastry and bring the corners together into a little pillow. With four sheets, this makes 16 little pastries.
Bake at 180C for about 30 minutes depending on how crispy you like the pastry.

Alternatively you can add some chopped salami and/or olives and make pizza pastries.

These are quite filling. Great for munchies, as picnic food or for entrees.

If you go through stages of having to limit your diet to noodles and oats, as many of us do these days, using home grown greens and herbs is a great way to cheaply and easily expand your diet and get some extra vitamins.
